DIY Brunch Banquet Recipes

Mini Quiches

1¼ cups baking mix
¼ cup butter
5 slices bacon, crisply cooked and crumbled
½ cup milk
1 egg
2 tablespoons sliced scallion
¼ teaspoon salt
1 cup shredded Swiss cheese

Preheat oven to 375 degrees. Spray a nonstick 24-cup mini muffin tin with cooking spray.

Mix biscuit mix and butter in a bowl until a soft dough forms. Put 1 teaspoon of dough in each muffin cup, pushing dough against the sides of the cup to form a crust. Divide bacon evenly among muffin cups.

In another bowl, beat milk and egg until blended. Stir in salt and scallion. Put 1 teaspoon of egg mixture in each muffin cup. Sprinkle cheese over the top of each cup.

Bake for 20 minutes or until golden-brown. Let quiches cool in muffin tin for 5 minutes, and remove to a wire rack. Serve slightly warm or at room temperature.

French Toast

⅔ cup milk
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 teaspoon vanilla
2 tablespoons sugar
Salt to taste
2 eggs
Butter, for frying
6 slices brioche or white bread
½ cup maple syrup

In a medium bowl, beat together milk, spices, vanilla, sugar, salt and eggs. Melt butter in a medium skillet over medium heat.

Cut each piece of bread vertically into four different slices. Once skillet is hot, dip each bread slice into mixture soaking both sides. Place into skillet and fry on both sides until golden brown. Serve hot with bowl of syrup.
