First Day of Summer

Summer solstice is in full swing as we continue to enjoy the bountiful sunshine and warm weather of the season. Celebrate the first day of summer accordingly with this garden-fresh recipe, which pairs perfectly with KORBEL Sweet Rosé.

Grilled Halibut With Mango Salsa

1 medium, ripe mango, diced
2 tablespoons chopped cilantro
½ cup diced onion
1 cup cherry tomatoes, quartered
1 garlic clove, finely chopped
2 tablespoons lime juice
Salt and pepper, to taste
2 tablespoons olive oil
4 (6-oz.) halibut fillets
Lime wedges, for garnish

Combine mango, cilantro, onion, tomatoes, garlic and lime juice in bowl, and stir thoroughly. Refrigerate, covered, until fish is prepared.

In another small bowl, combine salt, pepper and oil; mix well. Coat both sides of each fillet with mixture.

Heat grill to medium-hot, and place fillets on rack. Cook each side for 4 to 5 minutes, or until fish flakes easily when tested with a fork. Move fillets to a serving plate along with the salsa in a serving bowl. Garnish with lime wedges.
