Friendsgiving Brunch

Celebrate Thanksgiving early with your crew by hosting a Friendsgiving brunch! While everyone usually spends Thanksgiving with family, hosting a brunch the Wednesday before gives you time to catch up with friends and toast to the fabulous celebrations ahead. Serve our seasonal pumpkin pancakes for a tasty main course, and don’t forget the brunch staple: mimosas!

Pumpkin Pancakes

1¼ cup flour
2 tablespoon sugar
2 teaspoon baking powder
½ teaspoon cinnamon
½ teaspoon ginger
½ teaspoon nutmeg
¼ teaspoon salt
1 pinch clove
1 cup low-fat milk
2 tablespoons melted butter
½ cup pumpkin purée
1 egg
Maple Syrup

Mix flour, sugar, baking powder, cinnamon, ginger, nutmeg, salt and clove in a bowl.

In a separate bowl, mix milk, butter, egg and pumpkin. Pour wet mixture into dry mixture, and stir thoroughly.

Heat a greased griddle over medium heat. Pour ¼-cup portions of batter onto griddle, and cook each pancake for 3 minutes, or until both sides are brown. Serve hot with maple syrup on the side.

Mimosa

4 oz. KORBEL® Brut
4 oz. orange juice

Top orange juice with KORBEL in a large champagne flute.
