Refreshing Salad Recipe

As a side salad or a fruit-filled main course, this recipe pairs perfectly with KORBEL® Blanc de Noirs and warm weather.

Apple-and-Cranberry Salad

½ cup dried cranberries
½ cup KORBEL Blanc de Noirs
1 package baby lettuces or spring mix
1 Gala or Fuji apple, diced
½ cup sugared pecans
¼ small red onion, thinly sliced
¼ cup mild goat cheese, crumbled

Reconstitute dried cranberries in champagne until plump. Toss all ingredients except goat cheese together. Crumble goat cheese over each serving. Top with Champagne Vinaigrette.*

*Champagne Vinaigrette

3 egg yolks
Juice of ½ lemon
1 tablespoon Dijon mustard
1 teaspoon minced garlic
1 ½ teaspoon cracked pepper
3 ounces champagne vinegar
¼ cup KORBEL Blanc de Noirs
1 teaspoon salt
1 dash Tabasco® sauce
1 dash Worcestershire sauce
⅓ cup chopped parsley
2 cups olive oil

Whisk all ingredients except oil together. Drizzle in oil slowly, whisking to emulsify.
