Chicken with Lemon and Potatoes

Ingredients:

  • 1 whole chicken
  • 1 lemon, halved
  • 3 garlic cloves
  • 1 ¾ lb. red potatoes, diced
  • ½ bunch fresh parsley leaves
  • ¼ cup olive oil
  • Salt and pepper to taste

Directions:

Preheat the oven to 400 degrees F. Rinse chicken with cool water, inside and out, and remove any excess fat around chicken cavities. Pat chicken dry and place breast-side up in a roasting pan.

In a small bowl combine lemon zest, 1/8 cup olive oil and garlic cloves. Spread mixture between loosened skin and meat. Rub hands over skin to spread mixture thoroughly. Season chicken inside and out with salt and pepper, then tie legs together with twine to keep shape.

In a bowl, mix potatoes with salt and remaining olive oil then toss around chicken. Roast chicken and potatoes for 1 to 1 ½ hours continually rotating the pan every 20 minutes or so to make sure skin is evenly cooked. Once chicken reaches 165 degrees, move from oven and let mixture cool off for 15 minutes before serving. Serves 6.
