As Valentine’s Day quickly approaches, the pressure is on to find your significant other the perfect gift or a snag reservation at the hottest restaurant. Mix it up this year by creating a romantic date night at home with a DIY dinner.
Hit the grocery store for ingredients and KORBEL California Champagne, and spend the night cooking an intimate meal that both of you are sure to enjoy. Start on your plans by using our recipes below, created especially for this day devoted to romance.
Pour Vodka and cranberry-apple juice into a shaker with ice. Shake and strain into a wine glass. Top with KORBEL. Garnish with a strawberry slice.
Preheat the oven to 400 degrees F. Rinse chicken with cool water, inside and out, and remove any excess fat around chicken cavities. Pat chicken dry and place breast-side up in a roasting pan.
In a small bowl combine lemon zest, 1/8 cup olive oil and garlic cloves. Spread mixture between loosened skin and meat. Rub hands over skin to spread mixture thoroughly. Season chicken inside and out with salt and pepper, then tie legs together with twine to keep shape.
In a bowl, mix potatoes with salt and remaining olive oil then toss around chicken. Roast chicken and potatoes for 1 to 1 ½ hours continually rotating the pan every 20 minutes or so to make sure skin is evenly cooked. Once chicken reaches 165 degrees, move from oven and let mixture cool off for 15 minutes before serving. Serves 6.
