Enjoy a Low-Cal Lunch With the Gals
Summer is the best time to get together with the gals and catch up over a healthy lunch. This recipe for a light, refreshing KORBEL cocktail is perfect when paired with a healthy chicken pita for the warmer weather and starting a good conversation with friends.
Coconut Water KORBEL Fruit Punch
- Ingredients
- 1 ½ cups coconut water
- 1 cup KORBEL Brut or Extra Dry
- ½ cup orange juice
- ¼ cup frozen fruit of your choice
- Splash of grenadine
- Directions
- Mix all ingredients in a large pitcher
- Pour into champagne flutes
- Serve and enjoy
Chicken Pitas
- Ingredients
- 2 tablespoons low-fat yogurt
- 2 teaspoons tomato purée
- 2 teaspoons tikka masala curry paste
- 150 grams skinless uncooked chicken strips
- 1 teaspoon vegetable oil
- 2 slices of pita bread
- Shredded lettuce and cherry tomatoes
- Directions
- Combine yogurt, tomato purée and curry paste
- Toss in chicken and coat with mixture, cover and refrigerate for 15 minutes
- Add oil to preheated, nonstick pan
- Cook marinated chicken over medium heat
- Warm pitas and fill with lettuce and chicken
- Top with cherry tomatoes and serve
